Yummy Pumpkin Soup


I have had pumpkin soup once....a very long time ago...and it was GROSS! So I never had it again until ya, you know me, I had to try to make my own the other day! This recipe is not only delicious, it is also good for you....depending on how you make it. I will give you two different ways!! One...OMG delish! AND two...healthy but delish as well :)

ONE: Yummy Pumpkin Soup (serves 2)

1 15oz can of pumpkin (100% pumpkin)
1/2 white onion chopped
1-2 cloves garlic minced
2 TBS butter
1 cup half & half
1/2 cup milk
1 TSP ginger
1 TSP curry powder (find at Walmart in the Ethnic foods section .99 cents!)
2 TSP cumin
Salt and pepper to taste


Let's do this....

1. Melt butter and sautee on medium heat chopped onion in medium sauce pan. Cook until transparent.
2. Add garlic and cook until fragrant.
3. Add in half & half, milk and pumpkin. Stir until well blended.
4. Add ginger, cumin and curry powder. Let simmer for 10 mins.
If it is too thick, add more milk slowly until desired consistency!
5. Add salt and pepper your liking! Done.

I serve a homemade garlic/cheese bread for dipping on the side! It is so good for a cold day!!

TWO: Healthy Pumpkin Soup

1 15oz can of pumpkin (100% pumpkin)
1/2 white onion chopped
1-2 cloves garlic minced
Cooking spray
1 1/2 cups fat-free milk
1 TSP ginger
1 TSP curry powder
2 TSP cumin
Salt and pepper to taste

Let's do this....the healthy way....

1. Sautee on medium heat chopped onion in medium sauce pan with cooking spray. If you don't mind a little fat, use coconut oil or olive oil. Cook until transparent.
2. Add garlic and cook until fragrant.
3. Add in fat-free milk and pumpkin. Stir until well blended.
4. Add ginger, cumin and curry powder. Let simmer for 10 mins.
If it is too thick, add more milk slowly until desired consistency!
5. Add salt and pepper your liking! Done....again.

So there you go, two different ways to make AWESOME pumpkin soup!
