Low-Fat Chicken Meatballs

These are one of my FAVE things to make!
They taste as if you are cheating on your diet because they are so rich in flavor, you have to try them!!
For breadcrumbs, I always make my own.
Tip: Toast an "Everything" bagel and crumble in blender, your crumbs will taste amazing for any recipe!



What You Will Need
1 lb of ground chicken
1 bagel
4 egg whites
1/4 cup of Fat-Free Mozzarella Cheese
1/2 tsp of each - Salt, pepper, garlic powder (or 1 fresh clove minced)

Toast bagel until very "toasty" but not burned! Put in blender to make into crumbs.
Add in salt, pepper and garlic. Blend well. Kneed crumbs into ground chicken.
Add egg whites and cheese. Roll into 1 inch by 1 inch balls and set aside on a plate.
Boil about 8 cups of water on the stove, this is what you will be using to cook/boil your meatballs.
Add meatballs slowly to boiling water. Boil for 25-30 mins or until no pink is seen inside.

Add these to your fave sauce and there ya go!!
